Yule Moon Cookies

Yule Moon Cookies

1 cup butter
1 1/4 cup sugar
2 tsp. grated lemon peel
1/4 tsp. salt
1 1/3 cup flour
1 1/2 cup grated almonds (blanched)
1 tsp. vanilla

Icing:
2 cups sifted confectioner’s sugar
1 tsp. vanilla
2 1/2 Tbsp. water

Cream together butter and sugar until fluffy and light. Add grated lemon peel, salt, flour, grated almonds, and 1 tsp. vanilla; mix thoroughly. Place dough in bowl. Cover and chill thoroughly. When the dough is well chilled; or the next day, roll out dough to 1/8″ thickness and cut with moon/crescent cookie cutter. Place 1/2″ apart on un-greased baking sheet. Bake in preheated 375° oven for 8-10 minutes.

Icing: While cookies bake, combine confectioner’s sugar, vanilla and water. Spread over the tops of cookies while still warm, but not too hot, as icing will melt. Thin with additional drops of water if glaze is too thick. Allow cookies to cool.

Yield: 10 dozen cookies

Papaya Pasta with Pepper-Mango

Papaya Pasta with Pepper-Mango
(Serves 2)

4 ounces uncooked angel hair pasta, rice noodles, or spaghetti
1/4 cup green bell pepper strips (approximately one medium
pepper)
1 cup chopped ripe papaya (approximately one small papaya)
1 cup chopped ripe tomato (approximately one medium tomato)
1/2 cup chopped ripe mango (approximately half a mango)
or frozen, thawed cubed mango
2 Tablespoons chopped fresh cilantro or flat-leafed parsley
2 teaspoons oil
1/4 teaspoon ginger
1/2 teaspoon white pepper
2 Tablespoons slivered almonds, as a garnish (optional)

Prepare pasta according to package directions. Rinse, drain,
and set aside to cool.

In a large bowl, combine bell peppers, papayas, tomatoes,
mangos, cilantro, oil, ginger, and pepper and toss to mix.
Add pasta and toss to mix. Top with almonds, if desired.

Kitty Litter Cake

Kitty Litter Cake

1 pk Spice cake mix
1 pk White cake mix
1 pk White sandwich cookies
1 sm Package instant vanilla pudding mix
12 sm Tootsie Rolls

Prepare cake mixes and bake according to directions. Prepare pudding mix and chill until ready to assemble. Crumble white sandwich cookies in small batches in blender. They tend to stick, so scrape often.

When cakes are cooled, crumble into a large bowl. Toss with half the cookie crumbs and the chilled pudding. Gently combine. Pour into a clean kitty litter box.

Put unwrapped Tootsie Rolls in a microwave safe dish two at a time and heat until soft and pliable. Shape ends so they are no longer blunt, curving slightly. Repeat until you have nine, and bury them in the mixture. Sprinkle the other half of cookie crumbs over top. Heat three more Tootsie Rolls in the microwave until almost melted. Scrape them on top of the cake and sprinkle with cookie crumbs. Serve with a new pooper scooper.
